Added solar panel mockup system following the same style as the energy mockup. Three solar panels generate 1-6 kW readings every 10 seconds.

Been asked to give support on this PR as it will be affected, and will need some changes to comply with the new sub-compose structure.

Every new service will need to be built in a separate compose file within its own directory in DockerCompose/stacks. There exist several other stacks that work for a good example, especially the energy service (as it is similar to this one).

It might also be a good idea to either rebase or create a new branch to avoid conflicting files or re-introduce old files. If needed, you can contact me by commenting here or in Discord for more in-depth support.
